I am currently back on Windows 10 on my Byte Plus.
Everything is humming along but I’ve run into an issue that I have experienced before.
The micro SD card keeps dropping offline. Its extremely frustrating as I installed the majority of my apps on it.
My only solution is to reboot if I am remoted into it or to eject the MSD and re-insert. This issue has occurred while formatted as Fat32 and NTFS.
Has anyone experienced this?

Yes I have had this issue before, not sure if it’s an Azulle or Windows 10 problem since I have had sd card drop on my Dell Venue 8 Pro. That being said I am running The Fall Creators update on the Dell and have experienced no issues. I have the same Win 10 build on the Byte plus, but since I don’t really use the SD card that much I haven’t noticed. I use a 1TB “My Passport Ultra” connected to the Byte Plus via USB (Fairly cheap at Best Buy at the time). I have all my apps running off that drive as well as all of content as well and have not had any problems. I too run my PLEX server on the Byte and it runs perfectly.

Have you tried that microSD card in a different hardware, just to confirm if the behavior is the same?
Also what is the size of the microSD card ? If is 64GB or bigger try to use exFAT as a file system.
